Estate formats — not a ballroom buyout
We cook in villas and estates. That is a kitchen constraint, not a vibe. If the house cannot hold the list, we say so before a deposit. Wet-weather plans are written: indoor backup, covered lānai, or a reschedule posture on /legal.
Florals, photography, and officiants are yours or quoted as add-ons. The bar is a first-class line — see /bar. We do not bury a bartender inside a “hospitality fee.”

Welcome dinner through recovery brunch
The week we write is four culinary events you can cut. Welcome dinner is the ice-breaker — family-style or grazing, the room still arriving. Rehearsal is a coursed table for the inner circle. Reception is the staffed room of about ten to seventy-five: buffet if the list walks, plated if the dining room can take a restaurant pace. Recovery brunch is optional and gentle. Separate lines mean a Monday brunch can drop without reopening a mystery package.
Oʻahu weekends stack tighter — Friday through Sunday on the Gold Coast or at Ko Olina. Maui weeks run longer when the villa is the venue for the whole stay. Kauaʻi estate weeks are both-shore and inquiry-stage. Hawaiʻi Island weeks are Kohala and Kona first, also inquiry-stage. Open the island wedding page for the house. Every outdoor table carries a written wet-weather plan: indoor backup, covered lānai, or the reschedule posture on /legal. Kauaʻi North Shore winters add a road clause. Kohala lava-coast wind is a logistics fact. Oʻahu December through March presses inventory. Maui September, October, and May move first.
One culinary team holds one wedding week at a time. We will not pencil two overlapping estate Saturdays. Oʻahu and Maui request a quote as soon as the date is real. What the written week costs

Servers $80 an hour, sous $105, four-to-five-hour minimums. Service 20% and GET up to 4.712% print after the food. Fifty percent locks the week once you accept the written total. A tip is never required.
Elopements and dinners for two are a fixed-price product, not a per-guest fiction: from $675 on Oʻahu, $750+ on Maui, $975–$1,425 on Kauaʻi, from $825 on Hawaiʻi Island. Larger rooms than seventy-five are exceptions. House rental, florals, and photography stay yours unless we add them as lines. Alcohol is BYO or /bar.

We slot into a planner’s timeline. COIs, load-in windows, and quiet hours are arranged with the property before the first welcome pour. We do not claim venue exclusivity we do not have. If the estate cannot hold the list, we decline the headcount before we design a cake-cutting window.
